GF + Vegan Pumpkin Chocolate Chip Oat Bars

This is one of my favorite recipes, so it had to be my first to share with you all! My mom used to make my sister and I these delicious Pumpkin Chocolate bars to have in the fall for breakfast and they instantly became one of our favorites! I recently made them with a few alterations, and have transformed them into being completely vegan & gluten-free! These healthy pumpkin bars are the perfect on-the-go breakfast or an amazing, and healthy, late-night snack. 


  • 3 cups gluten-free oats ( or oat flour)

  • 2 teaspoons baking powder

  • 1/2 teaspoons baking soda

  • 1/4 teaspoon salt

  • 1 1/4 teaspoon cinnamon

  • 1/4 teaspoon nutmeg

  • 1 cup canned pumpkin puree

  • 2 teaspoons pure vanilla extract

  • 1/2 cup unsweetened applesauce

  • 1/2 cup coconut sugar

  • 1 tablespoon melted coconut oil

  • 1/3 cup vegan chocolate chips, plus 2 tablespoons for sprinkling on top (I LOVE the Enjoy Life Ones)


  1. Preheat oven to 350 degrees F and coat a 9x9 inch baking pan (I used coconut oil) 

  2. If making oat flour take your oats and put them in blender or food processor till they resemble flour. 

  3. Pour flour into a medium bowl and whisk in the baking powder, baking soda, salt, cinnamon, and nutmeg. 

  4. Next in another bowl whisk together pumpkin, vanilla extract, applesauce, coconut sugar, and melted coconut oil. 

  5. Next, slowly add in the oat flour mixture till combined. Then add in 1/3 cups of chocolate chips and continue to fold together. 

  6. Pour batter into the baking pan and then sprinkle remaining chocolate chips on top.

  7. Bake for about 15-20 mins, check by cutting a small slit in the middle. If the knife comes out clean they are all set! Once done allow to cool for about 10 mins and then cut and enjoy!
